We have a full shower enclosure, yet the shower head is just above the enclosure on the drywall. My husband is very tall and the water is hitting his head then getting the wall wet directly behind the shower head. Drywall compound is most often water soluble. The method of repair will depend on your use case and the type of finish desired. If you remove the drywall you could replace it with a cement board which can be taped with special tape and compound. The concrete board will take a texture just as well as drywall (but note that the texture chosen might be made of water-soluble mud too).

Mud of any type and tape works fine but there is one problem with that. Moisture from the shower will wick into the spackle/tape causing need for repair later. The better way is to use vinyl tear-away "L" drywall edge molding. These are available at big box depots everywhere.
